Time to get ready for a party at J.R.'s; taking 4 cured and smoked chickens and a pasta salad as our donations. There should be 12 or more of us to enjoy the day on Sunday! Monday is for our individual respects we pay.
Bought 4 chickens at Kroger on Sunday after the flag football game we watched in Mansfield; our grandson Trey (age 4) played in it, it was their last game and they won it and won the championship!
(any chance to show off a grandchild, y'know?!)
I digress. Got the chickens home and the next day made up 2 gallons of brine and cured them, leaving them in a 5 gal. bucket in the back fridge until Friday morning. Started up the smokehouse and brought them out, sacked them in stockinette and hung them in the smokehouse and got them smoking at 240°;
