So I started out last night prepping a brisket with a mustard and rub. This morning, I pulled it out of the fridge to let it rest before throwing it in the smoker. While that was resting I thought I would fire up the smoker.
I pulled out the MES 30, set the temp to 240 and threw some Mesquite in the chip tray to get it going. I noticed that it went up to temp VERY quickly, but no smoke.
I realized as I was sweating like crazy that it was hot as hell out today and the humidity was very high. So I thought to myself, maybe the sun is heating up the MES too much and that's why I am getting heat without smoke.
So I dig in my garage for an old patio umbrella that I had. I tried to set it up over the smoker to give it some shade, but of course it was broken and before you know it I have wasted an hour trying to fix it all while sweating like crazy. Being the rock of self control that I am, I picked it up and threw it across the yard before stomping on it and swearing at it.
I decided that I needed to have some device to block the sun from beating on the smoker thus appearantly raising the inside temp. So I got in my truck and went to Big Lots looking for an inexpensive patio umbrella to set up over the smoker. I found a great deal on one that was a clearance/display model. Only $15 after talking the manager down from $39!
So I brought it home and set it up, problem solved! Temp is true and I now have nice smoke.
Brisket went in and I prepared a meatloaf too that will be for tomorrow's dinner. Both are in the smoker and I plan on adding some QView when it's done.
