Well I tried to hold out a little longer. Then I came across this marvelous bone in pork butt at my favorite store. I couldn't resist. So earlier I began the first steps in prep. Normally I prefer to let it in the fridge and let the rub do its thing for 24 hrs. Today will be only 12 hours. But my MES hasn't let me down yet. I will be doing pics on next post. I always share with you good people. Count on it being in my smoker at 11pm tonight. Fill my block with good smells of smoke.
