Hi , Used my smoker last year and all worked out great. Cleaned the grease out of it last year and just went to use it for the fisrt time this year. Put some ribs in and started smoking checked it a few hours later and noticed all the meat was covered wirth soot and was all black. had to throw it all away.
Now I read some people say don't clean the walls of the smoker which is what I did but couldn't get that black stuff off, I have read some people say this is the seasoning of the smoker and not to clean the walls. Im confused here can someone tell me why this happenned and how to clean this thing properly so this doesn't happen again.
