First post to this forum and new to the smoking game. Was unsure that I want to get a smoker but as the weather got colder and my desire for all things meat, I took the plunge, I bought a MES 30 and it arrived with the larger smoke box so I was set to go. Started simple with a couple of whole chickens, 1 beer can and 1 not. Both turned out perfect. Then a pork butt since it seemed to be forgiving if you are patient. Some country style ribs just for fun and now, I am hitting the Turkey for today (beercan style). I did one yesterday to make sure I had it down. I brined the first one for 24 hrs in a simple salt/sugar with bay, black pepper and some orange juice.
1.5 hours into the smoke using AMNPS with Apple pellets

I am a researcher and this forum has been a wonderful resource and I have to say, with all of the information available ,everything has turned out great. The only thing is that the breast was not as moist as the chicken I had done before.
Look forward to the second turkey that is on today. Here is a quick look from this morning. This one was brined with the same as above however, I loaded the drip pan with some extra beer from the inserted beer can.
Loading it up into the MES with AMNPS with apple.
