I was thinking a little outside the box on this smoke. I took some medium sized potatoes rubbed with EVOO and rolled them in sea salt. I then gently placed them in a stockinette, tied off the ends and hung it in a pre-heated MES 40 @ 250* with corn cob pellets the next hour.
While those were sarting to cook, I took a small Tri Tip roast patted dry, and lightly rubbed with the EVOO , and sprinkled the basic SPOG all over, (salt, pepper, onion powder, garlic powder). I let it rest for perhaps an hour and a half and then also placed in a stocking vertically in the smoker. If I remember correctly I lowered the smoker temp to 240* and let it rock on for about three hours till the IT was 130. I then did a reverse sear 5min oneach side as hot as my gas grill would go with the lid open, Pulled it to let rest for 30+ mins and sliced it up. Here are the few pictures i took. The corn cob smoke was awesome flavor.Thank you for viewing.
