Good smoke/bad smoke??

I’m only on my 3rd cook with the mailbox mod. First 2 no issues.
Today I’m doing a small brisket for practice. Something strange happening though. Haven’t seen or heard of this.
I’ve got the MES with 2 vents at the top. So far all of my experiments and 2 cooks have resulted in TBS coming out of both vents. Today however one vent looks like TBS and the other looks thick and white. Picture attached. Am I crazy?? Is this a problem?
Any help is greatly appreciated.
I’m sea level, no wind today, 47 degrees out. No big changes from my last cook. Other than Apple to hickory.

Phew! I was worried because I’ve had some bad luck with bitter meat. But that was before the mailbox. Ok thanks guys, glad I’m not ruining this brisket....yet!

While I’m on the site I’ll share pics of my first turkey breast. It came out so good and juicy. I was very happy with the results and my family loved it. Finally!!!

Moisture will show up as white smoke . I never worry about it . Mine looks like a freight train runnin up hill . Never a problem .

I would agree with this.Very often I'll be in my backyard with the smoker in the shade and barely see anything coming out the vent and yet I can walk around the corner into the sun and see smoke coming out around the corner.
Wow you ain’t kidding. I just did a walk around. One angle it was looking pretty thick and white. Walked to the other side and different angle it looks much thinner. Thank you!

The smoke looks fine. Don't get worked up over a little White smoke now and then. It is Hours of Billowing White that ruins meat. I learned that 30 years ago with my first Smoker and no SMF Folks to consult...JJ
