Besides smoking and bread I made sausage this weekend for the first time. Nothing special just breakfast sausage. I used collagen casings and a mix (Eastman Outdoors) this time hoping to make it easier for myself. I could not for the life of me figure out how to twist the sausage afterwards to make links so I tied them all (
). We have already had one meal from these and they were pretty good. I can't wait to try making more. I have some hog casings that I need to do something with, just looking for that perfect recipe...
