So today I'm trying my hand at smoking my first ribs. Hoping it goes well as I knowingly overpaid $54 for 3 full racks of STL Style Ribs!!! Trying to keep it simple but it's tough with so many varying schools of thought. Prepped with a simple dry rub and overnight in the fridge (maybe 8 hours). Fired up the offset and ribs are currently and hour and a half in. Planning to 3-2-1 with a foil wrap in brown sugar and honey. Spritzing every 30 min with a 1:1 water and cherry juice. Smoking on Pecan. Only issue I'm anticipating is that I can't seem to get my chamber temp to hold under 275. And that's one log quarter at a time added roughly every 45 min. I won't mind too much if the meat falls off the bone my first go round but I'd hate for them to turn out Dry. Some beginning of cook pics for your enjoyment

Looks like you have is going well. As for the temp, you'll be fine, just check the foiled ribs after the first hour to make sure you don't make rib soup. 3-2-1 is a guideline, and several of us have opened the foil to find total separation from the bones... That's quite upsetting! :laugh1:
 
Ok, checked my IT at 3 hours of smoke. Averaged 180 on all three racks. Went ahead and wrapped with brown sugar and honey. Gonna check em in an hour. More later....

If those tested half as good as they look, you are doing fine.  I think that is the best rib photo I have ever seen.  Thanks for sharing

Those ribs look like they belong on the cover of a food magazine! I bet they tasted as good as they look.

I dont know what you were worried about those look outstanding        were you happy with the way they turned out   thats the only thing that matters
