So, my wife picked up two smaller cuts of pork shoulder from Costco, about 9 pounds between the two. And in my prep, I cut the butcher's twine. Well, the thing unfurled. I don't know what those butchers were up to, but the thing was almost coiled up. I'm intending to do pulled pork with it, but I'm wondering how it'll go. Would you tie it back up so it's got some shape?
Needless to say, I'm not sure I'm going to be getting larger cuts from Costco again. I've never had an issue like this with a butcher. Hopefully I can save this.
