It was my birthday this weekend. I don't really want to celebrate birthdays at my advanced age but never turn down an opportunity to smoke.
My Bradley was tied up with short ribs for the main course (post to follow) and doesn't get that warm so I used the WSM Mini for the appetizer, Teriyaki Wings.
First, I mixed up some Teriyaki Sauce:
1/2 cup soy sauce
1/3 cup dry sherry
1/4 cup vegetable oil
1/4 cup sugar
1 teaspoon garlic powder
1 teaspoon ground ginger
Mix and let stand for while.
Then, I cut some chicken wings into sections (save those wing tips for soup or the stock gods won't look on you with favour.)
I injected the wings with the teriyaki sauce, always a messy project.
I threw the wings in the marinade for 4 hours covered in the fridge. I stirred them around two or three times.
I fired the mini up to 375 F with a chunk of apple and threw the wings on. While they were cooking on one side, I boiled the marinade for 5 minutes so I could brush it on the wings. Of course, it decided to rain so I had to rig a bit of a cover for the mini.
After about 12 minutes, I brushed one side of the wings with the boiled teriyaki sauce. Turned them and brushed the other side.
I cooked them for another 12 minutes and used my Thermapen to make sure they were cooked over 165 F.
The Verdict
These were perfect. They had a great teriyaki taste and the skin was bite through crisp without falling off the wings.
