Food looks great and the new smoker is a beauty! 10 degree difference from end to end on something of that size is incredible! I don't have that consistency from end to end on my MES 30 haha. 1 question I have for you has to do with the FB. It looks like you had the fire directly on the firebox bottom and not on a grate? Are you going to put a grate in so that the ash can fall and not choke the fire out?
I have learned in mine that when I am doing a longer smoke if I don't have under my rack cleaned out the ask builds up and chokes it out. Just food for thought.
