I have a couple buddies who run a weekend business doing pig roast catering.  When they get booked up, they give me a call for help.  This started as a 52 lbs carcass.  Roasted it for a birthday party.  I apologize for the picture quality, all I had was my cell phone.

 

1 hour on the spit..

Nice, looks like fun.  Welcome to SMF JimV!  Pretty soon you will have learned enough from the members here that your catering buddies won't call for extra help but advice!!

I love a whole cooked pig - there is nothing like the flavor you get with the whole pig

That's a nice lookin' piggy!!  I agree with the others, there is nothing like a whole hog.  We do them in a cooker....and nothing beats walking up to the cooker after a day of being teased by the smells coming from that thing and pulling off a big ole chunk of meat!!
