Well I saw the video and it had to be done. I kept a sink full of hot clean water so I could clean my hands.  I had to start and stop the video a bunch lol.

I started out with a small chicken.

I made the little lollipops.  Going to get a pack of wings and make a crap load these where great.

Looks like a little monster tearing out LMAO.  At this point I am half done about 15 min in.  Not as fast as dude in video but not to bad.

The missus wanted me to try a spinach stuffing.  I used 2tbsp of mushroom soup, fresh spinach, chopped onion and diced up some mushrooms

I wrapped it and let it rest in microwave for about half an hour.

And here is the wifes plate.  I decided to stick with the spinach theme and sauted spinach, onions and mushrooms.

This turned out to be a fantastic meal I will do again.  Next time I will have a drip pan under my bird between the stuffing and the bird the liquid was pouring (and I mean pouring out) or it.  Cut up all parts were super juicy and tasted great.  Oh yeah I hit this with a simple rub of Thyme, oregano, sage, salt and pepper.  It was smoked using hickory and one small chunk of birch.

Dennis - huge thumbs up for the pictures and tasty looking meal you shared. I'd be intimidated to de-bone a chicken but you made it look pretty easy.

So how hard was it to de-bone the bird? That video made it look easy but I am guessing it was a little harder being your first time and all.
I was actually just as easy as he makes it look in the video.  It just took me alot longer

From start to finish about 45 minutes including starting and stopping video.

The tater's are evoo with some salt and pepper they turned out fantastic

Now you are the Deboning Man. Dennis yyou did a great job and I would have to say that Jacques Peppin would be very proud of you. I also saw that video and I will also have to de-bone me a chicken. I used to buy stuffed chickens from a Cajun Deli here in town. They were charging 18-22 dollars for stuffed birds that were stuffed with boudan or jambalia and other cajun goodies. Now I think I will be stuffing my own here shortly. Great Job my Friend and you have to get some
