I did a butt yesterday and it turned out to be just incredible. Everyone loved it. I tried to keep it simple and it payed off.

Tried to keep the rub simple. I splashed the butt with a little cider vinegar to give the spices something to stick to. Used the spices shown here (dried thyme on the far right). The Camp Mix is a mixture of saly, celery salt, black and white pepper, garlic and onion powder. I use it on EVERYTHING. You can't see it here but I also scored the fat cap.

TBS is just barely visible here. Used a combination of cherry and apple wood.

After 3 hours at around 250. Coming along nicely. Splashed with a little pineapple juice and dusted with bonesuckin rib rub at this point. (A super light dusting)

After 6 hours. Shooting for 200. It took another 45 mins from here.

All pulled. Mixed with a little more cider vinegar, a light dusting of Bone Suckin rib rub and Bone sucking sauce. I did this yesterday and brought it to my dads house for dinner tonight. Reheated it and the flavors and texture were fantastic. Made the best PP sandwich with some cole slaw and a nice fresh ciabatta roll. Thanks for looking and happy fathers day to all.

Looks like good smoke, good bark, good temps, nice clean bone, and a OMG good looking pan of Pulled Pork. Nice work Doug, and fantastic pictures.

Now you have done a great job on that butt. You say it's your 2nd one...... LOL It sure looks like you have been doing them for awhile. YumO
 
That's some great looking pork.  I think I'm going to bump my temps up to 250, and see if I can get them done in 7  hours.  That sure is a lot easier than the 11 hours it took me to do my last one at 220.  Great job.

Actually, you can't tell from that angle but it's really just a Charbroil H2O $39.99 Home Depot special., but I LOVE it.

Bone Suckin sauce and rub are my absolute favorite. The perfect balance of sweet and heat. I use it on everything.

Don't sweat the long smokes, fellas. I do mine early just in case all hell breaks loose, like it did on last-night's smoke. I started a butt burn, and all was well up until I forgot to switch LPG tanks and my Vault burner was down to a whisper @ 125*, just when I/T's were climbing out of the mid 160* range. I swapped tanks, re-fired, and I/T's were in the low 160*'s again. About 30 minutes later, a severe thunder storm came hauling the mail through town...rain, hail and high winds.

Long story short, I started the 2 butts (17.5 lbs total) @ 10:00 pm last-night, and foiled to rest @ 167-168* I/T @ 8:30 pm tonight (22.5 hours in the smoker)...this is how it goes sometimes. This smoke time didn't matter to me, as this one's for the freezer for a family gathering next month.

Keep the smoker(s) warm & happy!
