My kids decided that Dad needed a smoker. (I actually think that DW gave them the idea 'cuz she loves BBQ.) Anyway with the gift card, I got the 30" MES w/window and meat probe and am ready to go. Asked DW what she wanted to try first and she suggested brisket. Sooo.... Gonna season it tonight and try a brisket tomorrow...Have read mucho threads, so I am just dangerous. Any surefire ideas to make me a hero? So I know 225-250 to about 190. Apple juice mop and in the water tray. Gonna rub with a bunch of stuff in the cupboard. Mustard? Anything else.......Damn the torpedos! Full speed Ahead!.

My family thinks I'm obsessed (maybe I am, a little), but they never complain about the Q when I serve it.

Low & slow for the brisket. The temps will plateau/stall on you as the connective tissues break down, so be patient. If you don't have much fat on the top, throw some bacon over it to keep moist and juicy. Rubs are entirely a matter of taste; I like it simple so the meat an smoke can speak for themselves.

Don't forget the Q-view!
 
Wow! Newbie is going to pull off a brisket on his first smoke!! You da man, dhole!! I took me nearly a year of smoking everthing else before I jumped to a brisket. Looking forward to see/hear how it turns out.

Make sure when you slice it you slice against the grain. Even if it's smoked to perfection, if it's too tough to eat, you won't be happy.
 
Welcome! Man are you at the right place! These guys are awesome! I'm smoking my first brisket too! I posted about it on the beef thread. I already screwed up though and butchered it! LOL! It's all good, what a great hobby to have and what a nice gift from your family!

Since its gonna be such a long smoke I'd suggest looking at ABT's or fatties for a little snack as long as the smoker is going

Welcome to SMF Dhole. Good luck on the Brisky. Don't let it intimidate you. Just keep in mind, if you hit a stall, don't PANIC!! Open a beer, soda pop, bottle of water, sit back & relax. i love me some brisket! that was actually my first smoke as well. i cheated tho... i bought a traeger to start out with and it came with a cookbook with a recipe for "bruces brisket", but that was before i found this place. it turned out really good! you'll be fine with all the experience on this site, all ya gotta do is ask and almost always somebody chimes in perty quick! good luck tomorrow and don't forget the qview!
