smoking rookie here-using a modified ECB, I'm smoking a 12lb turkey. Temp is holding up pretty well, in the 225-250 range. what is a good estimate to use on cooking time? 40 min/lb? that is if I can stay in the 225-250 range.

if you stay around 240-250 iwould check the temp of the bird at about 3 hours

my guess would be about 6hours till done

I smoke 5-6 turkeys a year and all of them are 20+ lbs. 6 hrs and there donetongue.gif

For a 12 lb bird, I'd say 240ยบ will getchu done in around 6 1/2 hours.
