gettin ready for thanksgiving so i thought of a new twist to turkey,jerk wings are a favorite around here, so why not do the whole turkey?

Injected with oil, jerk seasonings and half a budweiser

Rubbed with jerk paste and into the fridge overnight

i like to wrap a cheescloth around the turkey for the first half of the smoke, it helps keep turkey moist and also retains mop which i pour on every hour.

as long as the smoker is on why not toss in a few ABT's

Half are stuffed with strawberry cream cheese (the girls love this) and the other half are full of some pork from last weeks smoke

Then wrapped with bacon of course

well ok, as long as the smoker is on why not a few mushrooms also, saturday is a long day with many football games so need some more food.
These are stuffed with lobster sheese spread and topped with a fat piece of jalapeno cheese, then topped with, what else, BACON

halfway through the smoke, pull off the cheesecloth so the skin starts to turn and crisp up.
I throw the cheesecloth in the water pan to let all those spices boil out in the smoke

Everything looks great so far but strawberry cream cheese in the ABTs? I'll have to take your word on that one.
Can't wait to see how your bird comes out.

The abt and the shooms look good and I not gonna ask about the turkey neck thingy. But one word of advice thou you can post alot of pics (Qview) at once so you don't have too respond everytime you post another picture. I'm with Fire and waiting for the bird I really like jerked food so much we are Jamericain.
 
i usually put the mushrooms for about an hour
i found they fill with water so i started poking a few holes with a toothpick so the moisture drains out
 
It all looks great, I like the idea of the ABTs with the Strawberry Cream Cheese. I tried them with Pineapple Cream Cheese once...
