I decided to clean out the deep freeze and make some sausage. Got everything ready, and then I discovered that I didn't have any casings. Oh well, bulk works for me. Ended up with 8 lbs. of breakfast sausage, 7 lbs. of italian, and about 12 lbs. of boudin. Made a few boudin balls just to sample it. They were pretty good, but I think I'll deep fry them next time. I'm set for a little while (or at least until I get some casings).
