Smoked Then Seared Beef Fajita Tacos w/QVIEW (pic-heavy)

This was kind of a spur of the moment smoke. To be smoked was:
  • Approximately 2# out of a 6# pack of beef plate skirt.
  • Foil pouch containing onion, chives, jalapeƱo, and carrot.
  • Flour tortillas for the tacos.
I changed up my usual beef marinade a bit and liked the outcome. I mesquite smoked the fajita meat for about an hour and a half then seared it for a minute or two on each side. The foil pouch thing was something that popped into my head at the last moment. It turned out awesome in the tacos. I seasoned the pouch contents with lemon pepper, a capful of regular vinegar, and a bit of lime juice. The tortillas went in toward the end to toast them slightly and impart some mesquite goodness on 'em.

As always, here are some pics. I hope you enjoy.......

Here are some of the marinade ingredients:

Here's what came in the pack(I only did 2# of it):

Looks good and tasty. Nice job smoking the tortillas. Maybe even try smoking some onions, tomatoes and japs and make a smoked salsa, I bet that would be great.
And no worries about all the pics, the more the better. I guess that's why you can add up to 30 per post, so we can drool more.

If this had been a planned smoke, I would have done exactly that. The good news is that I have another 4# in the freezer.

That looks like a great recipe. I wish I lived somewhere where it was warm all the time. Nothing like flip flops and shorts. We just got dumped on by 6.8"
of snow 10 miles south of Flint Mi.

I appreciate the kind words guys. Jeanie, Ron, and TXbbqMan, thank you for the generosity PDT_Armataz_01_34.gif .........

Don't feel bad man, we get snow here too! It's a phenomenon that occurs every 120 years. LOL icon_lol.gif But seriously, I hope the weather gets better for you all. It's a bit akward and at the same time cool (no pun intended) to see qviews with a blizzard as the back drop PDT_Armataz_01_03.gif

Happy Smokes,
