All done at 9:30 pm and its finally dinner time I put a bunch of fennel seed with the rub which has led to a very Italiany sausagey flavor. great smoke flavor, perfectly cooked. More proof that all a man needs is an ECB and membership at SMF to pull of a perfect smoke. The only mods I did were some air holes in the coal pan.
