Rigged up my MES to cold smoke some cheese. Worked ok, but the MES cycled off and not much smoke then. 1st I ran the MES at 165 then all the way up to 225 to get more smoke. It was about 50 degrees out here today and the cold smoker (Masterbuilt 7 in 1 smoker) never got over 80 degrees. I think for future cold smokes I might use a hot plate that way the element will always be on and always smoke.

It tasted good. Everyone liked the cheddar the best. Anyone experience with coating the outside with things for extra flavor?
