None the less...here they are. Not bad, really. Should have used more red pepper.

Stuffing: Black beans, celery, garlic, onion, kosher salt, C.B. P. and some red pepper and cumin, entire mix lightly braised in butter.

70/30 beef pork

Nice looking fattys! What did you think? Great aren't they? Do you have a good hard salami recipe? Smoked and I have been trying to find something like Oscar Meyars hard salami for about a year now. I've come close a few times but no cigar yet!

Yumm...fatties good! Din't realize i was suppost to use store bought ground meat/sausage, so I did my own...hehe...Sigh no salami. But honestly, my heart lies more in a coppcolla/prociutto type lunchmeat. Have ruined 3 chunks of butt so far, but I'm gonna keep at it. Seems my G'ma has made salami... I'll ask around.
