Leftover Fatty Idea !!!

Mmmmmm, I had an idea the other night and thought I would share it here. I did a smoke this weekend and threw a couple straight forward JD fatty's on. We snacked on 1 and have 1 left over.

Regarding the leftover fatty, I am going to cut it into quarters, length wise, and re-heat it in a quality spaghetti sauce on the stove top. Alright, ya see where I'm going here .... LOL !!

Toast up some french rolls, put a couple of sauce soaked lengths of fatty on them, top with sauce and a piece of provolone cheese, and wa-la, an Italian sausage sandwich.

Darn I am hungry now !!!

There must be a million uses for a fatty.
I think the very best is sliced hot off the smoker. wink.gif

added to queso(it's in recipes under side items),added to pintos, added to eggs,pintos,&skin on roasted garlic taters for breakfast tacos,added to chili,added to etoufette... the fatty is a wondermous thing.

Ya know, as soon as I clicked post reply, I was thinking " Someone is going to call me on my interpretation of Italian sausage sandwich" Well I an using the provolone and spaghetti sauce to back up my claim !! biggrin.gif

And then I thought "Hmmm, I bet there aren't too many people with left over fatty's around here" You got me on that one BH. icon_lol.gif

I smoked 5 or 6 one time. This was in hopes to vac pack & freeze a couple in order to take camping.......... Man, was it hard to keep the kids off of them ........... Well, I'm still a kid ....... I had to practice some self control! But what a treat that camp breakfast was!

I always do serveral and have leftovers for the next day. Somethings got to get you through until the next smoke ya know!

I learned with my first fatty, YOU CAN NOT DO JUST ONEicon_exclaim.gif

I'll be doing 2 butts in a few hours for our family reunion pot luck I'm bringin pulled pork. I had to run out this morning & bought 4# breakfast sausage that my cousin makes at his meat market. Only 15 to 20% fat. Best fatties ever.

I now put a minimum of 2 fatties every smoke. One for me & one to share, or just stager them so I got eats all night.

Seems like no matter how many I put on I never have any left.

You all talk about making them for breakfast. No matter how many I put on they never make it to breakfast to have with eggs.

Eggs?! is there a way to smoke eggs???

I found a trick to get a Fattie to work so it can be shared with the co-workers. Don't keep it in the passenger compartment with you! Deliver it in the trunk or on a trailer, just don't expect to leave it on the seat next to you for that morning commute, if it ain't gone by the time you get to work, there won't be much to share!

I purposely cook 2 or 3 Jimmy Dean/Bob Evan's Italian or Sage fatties just for this reason.

Crumbled up into marinara, or sliced into a french roll, the Italian fatty variety makes some great uses.

Also have crumbled onto homemade grilled pizza.

Good stuff!
