1.8 Kg Dark turkey meat, add some back fat
2 tsp Salt
1 tsp White pepper, fresh ground
1 tsp Celery seed
1/2 tsps Bay leaf, powdered or ground fine
2 tbsps Parsley, fresh, chopped
1/8 tsp Cloves, ground
1/4 cup of Bourbon
Lamb or hog casings

Fine grind the meat
mix in the remaining ingredients
Fine grind and stuff into casings.
Twist into 3 inch links
### For anyone who smokes Chicken or Turkey I would think we could substitute Smoked Turkey and or Chicken in this recipe, which is something I will try next time I make this sausage. 8)
