I'm going to try and cook beef ribs for the first time. Is there any advice you can give a noob.

Wondering what seasonings to use and should I season it tonight in perpetration to cook tomorrow afternoon..

What temp should I cook at and for how long..

Any help would be appreciated..

Do you know what type of beef ribs you have?  Locally I can get two types; short ribs, which are meaty and thick, and back ribs, which kind of look like pork spare ribs.  Back ribs have a lot of bone and not much meat.  I've smoked them once, and swore not to waste my money again. 

The key to tender, juicy beef ribs, regardless whether they are short ribs or back ribs, is to treat them like a brisket, for both the rub and the smoke.  Smoke them until they are probe tender, which is usually in the neighborhood of 200-205F, but it can be higher.  Personally I smoke beef ribs at 225F until they come out of the stall, then I crank the temp up to 275F.  I don't wrap them, just let them enjoy their time in the smoker.
