It's the best time of year with the opening of the college football season this week.  I always do a good spread for opening weekend.  This year I'm going with:

Pulled Pork

Chicken thighs

Armadillo Eggs

Blue Cheese Mac

Smoked Beans

White Sauce Slaw

What will everyone be throwing on the pit?

I think I'm going to make beef stew in my cast iron Dutch oven. Brown the meat on the stovetop, then onto the smoker to braise it in beef stock with onion and seasoning for a couple hours before adding the carrots and potatoes. Should simmer good at 230 on the ECB
