Hello SMFers, been a lurker for a while but I need to take the plunge now and join. I want to up my game and branch out. I'm from coastal So Cal (sorry don't blame me) and my only experience with smoking has been with a kamado for the last 12+ years. I want to branch out into cold smoking and charcuterie/salumi now. I want to build a curing chamber from an old refrigerator which I haven't picked up yet. I see online the refrigerator/freezer conversions have been over/unders which seems fine but I am wondering if anyone has any insight about a side by side conversion. They're all bigger than the largest over/unders and much more plentiful on Craigslist than the larger overunders. I hesitate on the medium to smaller size over/unders because I fear I will out grow in time. Really the question is: what's in the wall separating the freezer and the refrigerator sections? If I cut the walls out and carefully dissect out the insulating materials am I left with an impractical situation? I guess that's enough to start the inquiry. Thanks
