I just got a nice 10 lb pork loin and plan to cut it in half. I guess I will freeze half for later.
What I wanted to do is butterfly this out and stuff it with some spinach and mushrooms. I also got some goat cheese and fresh thyme to roll up in it. My folks gave me a big bunch of spring/green onions,so I guess I will saute those with mushrooms and garlic a bit. I want to stick that stuff in the food processor and add the baby spinach leaves to pulse a few times and get a good fine mix to roll up and tie the loin.
