I have smoked everything except a brisket, been intimidated by cost, and time. I am thinking of doing it this weekend in my LP Vertical smoker, any tips or tricks? I do have an igrill 2, so I don't have to babysit it as much. Being from Central Texas, I am thinking of a little salt, pepper, smoke. should I wrap in foil @ certain temp to help through stall? at this point I'm a beginner, so any advice helps...
