I had my offset smoker and two grills going, but for here I'll stick to the ribs. (pun somewhat intended)


Mixed up my favorite dry rub right after I salted and wrapped the ribs the night before.


Beginning; about 3hrs in while wrapping with butter, honey, and brown sugar (thanks @bj77!); and right before brushing on a little sauce in the final hour). I really loved seeing the bark develop real nice.


TBS....no leaks.


Family & friends favorite honey chipotle BBQ sauce.


If anyone remembers my early frustration with Engine No. 9, you know it makes me happy that for virtually the whole cook my probe sat right at 225F.


The finished product. Thick snappy bark, clean bones, no leftovers. Everybody, especially the kids, had a great time.

Looks great! What did you think of the combination in the wrap??
I'm still not sure what it does exactly, but I do know this: The crust turned out absolutely on point, and everybody loved them. Thanks for the awesome idea. It's going to be a regular step for this style ribs. Makes perfect sense with the dry rub having brown sugar and the sauce being chipotle honey.
 
Sounds like a great mix! And that is exactly what it does. The brown sugar and honey add a sweet element, the butter.. well butter just makes everything better lol -and the combination of it all absolutely makes a crust/bark on the ribs that is awesome. :) I'm glad you like it!
