Hey y'all. I picked up 3 racks of BB at Costco the other day and couldn't wait to let them rip! I noticed that my MES 30 wasn't rolling any smoke so I grabbed another thermometer and realized it was about 60° cooler than the unit said! No good! I cranked the heat on these bad boys and hoped for the best. I didn't bother to pull and foil. I did finish them with sauce on the grill to obliterate the membrane. Turned out amazingly well - given the issues. Bite off the bone tender and full of flavor!!
