Hi all,
My name is Chuck and I live in Midwest US. I have pellet smoker and am still gett ing used to it. I sit here today watching my smoker cook my very first brisket in the pouring rain. Oh well, all is good. After four hours I find it seems to be cooking faster than anticipated and will use the advice I've read about in this forum by checking with probe or toothpick.
