Old hot box turned into a cold smoker/curing chamber

HI FRIENDS!

I am planning on cold smoking various cheeses, sausages, pork loins, capicollas, etc...  So far I am not interested in hot smoking.

Pictures attached are of an old hot box that will be my smoking and curing chamber. The box will be attached to a wood burning stove via double wall stove pipe (approximately 8' in length). I will drill a hole at the bottom of this box and have a pipe running to it from a wood burning stove. Additionally I'll drill a hole at the top of the box and put a turbine vent for air circulation.

I am located in Ottawa, Ontario, Canada. As far as I am aware, ideal temperatures for cold smoking are 3 - 13 degrees celsius. 

Where I live, mother nature rarely produces these ideal temperatures for weeks, therefore, I need to make it happen! This is where I need your advice, tips, and suggestions.

My plan is to purchase this temperature controller ( ) and hook up a heating element to it. My questions is, what kind of a heating element would you guys suggest??? Also, what kind of a cooling device would you suggest for this controller/project? I am wondering if it's possible to make this box into a smoking and curing chamber as well.

Do any of you have the above mentioned controller and if so, what are your experiences with it?
