I will be trying my hand at jerky this weekend. I would like

to know, if you could use any cut of meat, what would you use?

I have tried it with a few types of meat and found so far that eye of round is the best. Striploin came out with a weird texture. Goodluck.
 
Eye of round is generally what I use for beef jerky, but here lately I've been using pork loin and making pork jerky, great stuff.

With either cut you can cut across the grain for an easier chew, or with the grain for a tougher chew.

I use whatever is cheapest.  Lately it's been bottom round.  I just make sure to slice it diagonally across the grain.  That way it gives it a little toughness, but not so much that you can't break off a bite.  My 15 y/o daughter has a little side business selling jerky at school....lol
