Hello fellow smokers. I live in land o lakes Florida. I'm 40 y/o. I purchased a dyna-glo vertical offset smoker this past Christmas and have just started my favorite new addiction. So far I have successfully smoked chicken wings, ribs and I just did my first spatchcock chicken. I use hard lump wood charcoal and my only challenge is maintaining heat above 250 degrees after the 1 and 1/2 to 2 hour mark. I try to add more of the charcoal sparingly as not to dry out the meat with the increased temperature. Other than that I'm in love with the smoking culture and BBQ in general. It seems to be a common ground amongst many of my friends and co workers. Almost a secret subculture. Very happy to be here and looking forward to learning and sharing all I can with my new family.
