Hello Group.....Happy New Year to All

My name is Cindy, I live in Palmdale, CA which is in northeast area of Los Angeles County. I have just purchased a Masterbuilt 40" electric Smoker.  Previously owned a MB portable camper type gas smoker; I think I purchased that one last June. I had very good results with everything I tried, but it was a real PAIN to clean so I returned it to Sam's

Club. I waited for the electric one to go on sale and snapped it up.

I didn't read the information until this AM-darn, I have a lovely 4.5# prime rib all ready to go.  I didn't know I would have to PRE-SMOKE  the unit first.  So my question is do I really have to do this step?

Welcome to the forum Cindy!  I think the pre-smoke is a good idea.  It will burn off any residual oils or chemicals used during production.  Just my 2 cents, glad you joined us.

A couple of hours at 275 with some wood chips & your good to go.

I wouldn't skip this step.
