Do you freeze them like this? or just keep them in the fridge?

I do the exact sme thing but my casing come out soggy out of the fridge and the freezer.
I freeze them. Do you fridge rest them before you vac seal?

I've noticed that after thawing they are damp. Not sure why. I let them dry out in the fridge for a couple days after thawing before bagging them. I also keep them in a small brown paper bag instead of a zip lock bag.
 
 
Nepas just out of curiousity, how would you describe the taste/flavor of that mix? I'm always looking for new pre-mixes that are decent. I use a lot of my own as well as Owens as my favorite.
I would put it close to Owens chipotle wildfire. Its not bad for $5. Tiny bag, does 25 lbs but once you get it open and move the mix around some its there.

So in my top 5 fav pre mixes this is how i like them.

Smoked Sausages

1. Owens BBQ

2. AC LEGG

3. San Segal

4. LEM

5. PS Seasoning

Runners up.
