​Disco so sorry for being late,I agree with letting it cook longer.I found a tooth pick to be a better instrument for checking tenderness.I have a small piece defrosting now I don't inject any of my briskets.

I really appreciate the input, Richie. I will try that with a toothpick. As for injecting, I am afraid I am addicted to injecting my beef. I find it doesn't over power the beef taste but complements it and kicks it up a notch.

I injected my last one with plain beef broth, having never injected briskets, and liked the way it turned out.
