I am going to try my hand at brisket. I have a full 13lb. Brisket... My question is can I start in smoker and finish in oven?? I don't know how I could find 20 hours to do this!!

I smoke my brisket at night while sleeping and just get up every so often to check on it . If you have a wireless temperature thermometer you can put it by the bed there great tool a must for me. And yes you can finish in stove but i think it tastes better on the smoker all the way. Good luck.

Yes you can start it in the smoker & finish it in the oven.

It's done all the time.

I would try to get at least 6 hours of smoke on it before transferring it to the oven.
