I had never done beef ribs and wanted to give it a shot. Picked some up at Fred Meyer.

Seasoned simply with salt, pepper and garlic powder. Smoked with a combo of hickory an pecan. One hour in:

After three hours of smoke and ready to wrap.

Put some apple ale in the foil and let them cook for a couple more hours and then ready for some sauce.

After the sauce:

One cut and ready to try!

I was pretty happy with the results for the first time. Thanks for taking a look.

Fyi less sugar will eliminate the black color, no, its not burned its the sugars caramelized either from the sauce's tomatoes or the rubs sugar. If you stay below 250 I think, you won't see it either.

BUt I think those ribs look awesome!

You sure its your first time?

Points for such a great maiden smoke!

Thanks Foamheart. First time for beef ribs. Done quite a few baby backs before but sometimes you just have to have something different. I knew it was not burned. No sugar in the rub but the sauce was fairly sweet. I think it picked up a little extra darkness when I sauced. Forgot to mention I put on a small chunk of cherry to smoke while they were glazing.

Thanks for the compliment. I would say you should go for it. Not sure why I waited so long, got to quit procrastinating.
