My first experience a couple weeks ago smoking some Cooked Salami was a success. As I posted before, the best in 30 years of making it.  So, today I thought I would try smoking some ribs.  Following the advise of other smokers, I prepared the ribs last night and put them in the cool garage overnight. Today I tried to follow the 3, 2, 1 smoking method.  Although the wind played a little havoc on keeping the temperature at 225F, I was able to do a pretty good job maintaining the temperature by putting up some windbreaks.  I definitely can't say the meat was fall off the bones, but was it good for a first attempt.  I think if I warm up the ribs tomorrow in the crockpot they may come closer to falling off the bones. My wife said I can make the ribs again any time.  She sure liked the flavor of the smoked ribs.  She kept saying "have I told you how good these ribs are?".  I will attach some photos of my first attempt at smoking ribs. I look forward to any suggestions how I can do a better job the next time. 

 

As for my next smoking experience, I am thinking of either smoking some fish steaks or pork butt.

Maintain the temps more closely or go higher to 250. Time in foil with some liquid does the tenderizing to get fall off.. Good first run...JJ

I've heard the more tender you want them. Just up the time in the foil. Add 30. To 45 min foil time. That will help.

I put the leftover ribs from yesterday in the pressure cooker this morning with the apple juice mixture I was using yesterday when they were in the smoker. Flavor still great and the ribs much more tender.
