Since it was raining yesterday I didn't get much done in the way of smoking, but I did whip up some pepperoni and some summer sausage. I didn't stuff until today and the pepperoni sticks are in the pit.
I ground the fat separate from the lean so I could follow Poli's recipe.
Then, I got into the Christmas spirit and made a Christmas tree, sort of... It's upside down, but oh well. That's all of the spices, cure, NFDM, and wine.
I ground up the fennel, caraway, and mustard seeds, and then mixed all dry ingredients together.
All stuffed and netted up. No, the net isn't required, but I have to differentiate between the pepperoni and the SS. Pepperoni chubs are in the smoker now, without smoke...

I'm doing a first here with SS, I'm using a SS seasoning mix from the Sausage Maker. But, I added a few items they don't mention in their wimpy recipe. I added whole mustard seed, whole peppercorns, some cayenne pepper, red wine vinegar, and NFDM. Oh, also hi-temp cheese. The patty test was good, so we shall see.
