i spatchcocked the chicken, then i cut off the wings at the second joint, then after that i deboned the thigh and leg together, not a big deal. really pretty easy.
then laid out the chicken on a flat pan, made some stove top stuffing (savory herbs), then put on jeffs cowboy rub on the inside of the bird. then put dressing on the inside
