This is with all vents wide open. Trying to get a baseline on how much charcoal to use. When I graphed my old ECB temps it looked like a sine wave. This thing is like a dead person's EKG! Flatline!!!!

Thanks for my first laugh of the day!  Always good to start with a smile.  And yep, WSMs obey well, doing just what they are told.

I've thought about smoked bear. Has anyone tried it? Our gun club has a bear roast every year after the season wraps up. I think it tastes terrible. Way too gamey for me and I eat pretty much anything.

Just be careful which Bear you Roast !!!:duel:

And who you calling "Gamey"???:icon_frown:

Week 2 of the WSM and I'm loving it! Menu for today:

7# pork butt
2 racks of BB's (to try out Jeff's sandwich idea)
2 racks of beef ribs
7# of chicken thighs

First on deck is the butt...

Naked butt

Rub my butt...

Prepping the cooker, almost full ring of KB, sprinkled with cherry chunks

This thing is amazing, dumped in full chimney of lit coals. Temp went to 225° in less than 5 minutes. Got worried and closed down the bottom vents to 1/3 each. Temp immediately stopped climbing and settled in at 225

Quick butt pic before I put her to bed

Stay tuned!

I guess everything was good. I can't even find the bones from ribs! There's not a drop of meat left....

Beef ribs today. Got sidetracked playing in the mud last night and forgot about them.

The better half is going to a baby shower so....

Where's the beef?

Pre-rub

SPOG (actually Cabela's Steak Rub, it's good stuff!)

Forgot the L&P "Bold" sauce so.. a layer of that and more rub

Gonna let these relax for a bit while I go out to cut more grass on my new riding mower
