Breakfast Sausage Recipes

Hello, hope everyone is having a good week.

 

Me and my wife have used Pop's recipe serveral times for breakfast sausage.  We  have modified it only by adding onion power and garlic powder to it.  I have seen other recipe's that add coriander, time and even sugar to the mix.  I'm interested in knowing what other people use in their's.  Forgive me of any typing errors, I just finished working 15 hours and am still not awake.

Hello.  Below is a work in progress.  Hope it gives you some ideas.  Keep Smokin!

BREAKFAST SAUSAGE

INGREDIENTS:

1 lb. GROUND PORK

2 tsp. GROUND SAGE

1 1/2 tsp. GROUND MARJORAM

2 tsp. GROUND THYME

1/2 tsp. CAYENNE PEPPER

1 ½ tsp. BROWN SUGAR

1/2 tsp. SALT

1/2 tsp of BLACK PEPPER

 

DIRECTIONS:

MIX ALL INGREDIENTS TOGETHER.  FORM INTO PATTIES AND FRY 5 TO 6 MINS. EACH SIDE.  KEEPS IN FRIDGE FOR A WEEK.  CAN BE FROZEN AND COOKED FROM FROZEN.  ALLOW A LITTLE MORE COOKING TIME.  VERY HARD TO SLICE IF FROZEN IN 1 BLOCK, MAKE PATTIES AND WRAP INDIVIDUALLY TO MAKE IT EASIER.  THEN PLACE ALL PATTIES IN ZIPLOCK BAG AND FREEZE.  THE SPICES ARE A PLACE TO START, TRY IT AND ADJUST TO YOUR LIKING.

KC, thanks for the reply.  Those are the spices I have seen used in almost every recipe for breakfast sausage I have found.  I may try some of them with the proportions of POP's recipe I already have mixed up.  His is really good.  I was just wondering what other people were doing in their's.  Thanks again.

I got the same recipe but in larger meat amounts plus I'm dealing with deer meat. I use to buy the pre mixed stuff but it has so much garbage in it like msg etc. I decided to make from scratch. I also use turkey in replacement of the fat to make it healthy works can't tell the difference other wise it's just kinda expensive.
