Hi everyone,

This is my first post.  I frequent this site often for tips and useful information.  I'm getting into smoking with a Char Broil Electric vertical smoker -Model #11201677.  I'm seeking advice on getting it to work effectively.  I've tried using it a couple times & need some help.

1st time:

Used unsoaked wood chips- Didn't seem to get much smoke until around 250-60 & even then it didn't seem like much.  I used a water pan.  The temperature could go all the way up to the 300+ degrees if I wanted.  No extension cord.  Just a test run on pork chops.

2nd time:

Used soaked wood chips and wanted to try smoking some thick burgers.  Couldn't get much smoke and couldn't get past 225 much with the thermostat cranked all the way up.

I'm in OH.  I've smoked things that aren't smoked by a lot of people just because I"m trying to get familiar with the smoker the first couple times.  I'm using  a Maverick Thermometer to gauge the internal temp of smoker. 

I'm trying to hold off on getting AMNPS & trying to find some options that will get me more smoke and ability to have higher temps than 225 if needed.  Any help/advise would be much appreciated.

As far as getting your smoker to get higher than 225*, I can't help you, but if it continues, I'd call the company. Mine is digital & yours is analog, but if it's supposed to go to 300*, then that's what you paid for, so it should get there.

As for the smoke----If you have to go to 250 before it starts smoking, it's more than likely that the wood isn't close enough to the heating element.

I wouldn't fight with it too much, before you get an AMNPS, because when the same element is used to both heat the smoker & make the wood smoke, it's a lose lose situation. Once the smoker gets to the set temp, the element goes off, so there is then no heat going to the wood.

Thanks Bear.  I appreciate the feedback.  I don't know if I should try to use a mix of soaked and unsoaked chips.  Does anyone think that would help?  Should I try to put the wood chip box right on the burner?  It got plenty hot when I used unsoaked chips, but I still didn't think the smoke was adequate.

I should save this to copy & paste it:

With a Watt burner, if you can get it to smoke, the general problem is You don't get smoke until the wood gets hot enough. Then it will start out light, go to medium, and then go to too much smoke. Then depending on how much wood you have in, after awhile it will ease up & go to medium smoke again, then light smoke, and then  no smoke. Then you put more wood in and start the cycle over again. So some of the time you'll have nice smoke, some of the time you'll have too much smoke, and sometimes you'll have no smoke, unless you put wood in before it stops smoking. Then you won't have any times with no smoke, but you'll have too much smoke more often.

That is if your smoker isn't insulated too good. If it's insulated good like an MES, it will smoke when the heating element cycles on, and stop smoking when it cycles off, because the same heating element is used for both heating & smoking.

When you fill an AMNPS, you just light one end, get it going real good, and put it in. It maintains its own fire, and just keeps smoking continuously & putting out just the right amount of smoke for up to 11 hours without touching it.

Also: With an electric smoker, wood chips or chunks don't usually get soaked.

Hello all,

I'm new to smoking, and enjoy doing it all ready. I use a char griller half gas and half coal with an offset firebox. I've tried smoking brisket and ribs already. I live in MO, really looking forward to learning some new thing to try out
 
Thanks again Bear. What are your thoughts on me using amnps with the ventilation I have? I keep reading about ventilation adjustments and my smoker only has a couple little holes in the upper back wall if you take a quick look at my picture. No real vents that I can adjust. Would that be enough? Sorry for all the questions. I got this smoker as a gift. I would have done my homework had I bought one.

I'm not familiar with the air flow of the Analog Char Broil Electric vertical smoker.

​Your best bet would be to PM Todd Johnson. He is the Amazing Smoker inventer & guru, and is a great guy. He'll tell you the best thing to do.

Tell him what smoker you have, and ask him which Amazing works best in your smoker, and where to put it.
