I've been on a seafood kick lately...Mrs. Red found a couple frozen Atlantic Cod fillets that looked pretty good (its often a challenge to find fresh fish and seafood in our part of the country). Here's an easy recipe that we really like for grilled fish:
Marinade Ingredients:
6 Tbsp. fresh lemon juice
1/4 cup melted butter
2 tsp. Worcestershire sauce
Put fish fillets and marinade in a large ziplock bag, and marinate in the fridge for at least an hour (longer is better). Take the fish fillets out and discard the marinade. Add salt and lemon pepper to taste.
2 - 6 oz. Cod Fillets...Marinated and seasoned...about to go on the grill
Got the grill up to 500*, coated the grill grates with canola cooking spray, then laid these on. Grilled the fillets for about 4-5 minutes on each side.
Done, and plated with roasted onion-seasoned potatoes, and fresh cole slaw.
A closer look...moist, flaky and delicious!
