Hi Everyone,

I just wanted to say HI to everyone in this forum as I have found it is a GREAT place for information.

I am from London Ontario Canada and am extremely green to do with anything regarding smoking. I thought I would try it out (SMOKING) so I headed out to buy a small smoker from Bass Pro. But instead I built my own. Well that did not go very well as I thought that the smokers they carried (which were many different makes & models) were cheaply made. So after that I went researching the internet and found what I wanted or liked in one. After many months I can across this one in my profile photo that I made. It is a reverse smoker; the only fire is all wood. After doing a few mod's (air flow problem) this thing ROCKS now. Since only a few weeks since I made it (Mid-September 2013) I am already planning a new one. LOTS of ideas running in my head on what I need in the new one. From pipe burners to a rotisseries (gear drive of course).

Smoke on and enjoy everyone! Paul.

Bill,

I just uploaded a few shot for everyone.

I did not realize I could do that, but now I do so expect more when I get my cooker fired up again this weekend.

Enjoy, Paul.

welcome1.gifto SMF!  We are so glad you joined us!

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

If you didn't read the "SMF User Guidelines" .....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Off site links are not allowed here at SMF per TulsaJeff. Not that you have done anything wrong....just a little bit of FYI for new members!

If you need any help roaming around the forums....just holler!  Happy to help out!

They tasted AWESOME ..... I had them sitting in my brine concoction for 24 hours. While smoking I had a bowl of Jack Daniels sitting where the smoke enters the chamber. Then about every 45minutes I sprayed them down with a mix of olive oil, apple cider & more Jack Daniels. The juices for my gravy also came out incredible. If anyone is interested in my recipe PM me.

Thanks for asking. Paul.

If you want to make cooler clean up easier, Ziploc makes a 20 gallon storage bag that you can buy 3 of them for about $6 or $7. They will hold two turkeys and a bunch of brine in each bag. I put the brine and the turkey in the bag, then put the bag in the cooler and fill the cooler with ice. The brine doesn't get diluted, and the raw turkey juices aren't all over the inside of the cooler!

I would be scared that the friggin bag would leak or break and my wife would go ballistic on me. Lol.

So I think I will keep using a cooler.
