New member from Texas

I've been smoking meat for about 10-12 years now, mainly briskets.  I just started doing whole chickens in the last 2 years or so after I got my new-to-me smoker.  It was my grandfathers pit that he had custom built and I got it after he passed.  It was definately a step up from my old smoker.  It is an offset firebox but there is only about an inch wide opening along the top edge between the firebox and the smoke box.


I happily stumbled upon this forum while looking for some info for this coming weekend.  I'm smoking a brisket, 2 beer can chickens, and some sausage for a get together this weekend.  I'll try and remember to get a few pics for the "q-view" and post them next week.

Thanks, I'm in Willis, TX, not to terrible  far from you.  My grandparents that I got my pit from actually lived in Arlington over near Rush Creek.

Down near conroe area ..very cool. Rush Creek isnt far from where I grew up... it used to flood alot :) think they finally fixed that problem. Small world... kinda :) Welcome again to SMF!!!

Welcome to the forums! This is the best place I know for sharing ideas on smoking, grilling, curing, etc. There are plenty of friendly, knowledgeable folks here who really enjoy helping one another. Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.


If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Well finally getting around to putting some pictures up.  I got the brisket on at around 4:00 AM and wrapped it after about 5 hours.  I got to excited about eating everthing that I forgot to take pictures before I cut it up!  Everything turned out awesome, brisket was tender and moist, so was the chicken.  Next time I smoke I'll try not to forget the finish pictures.

Looks like some excellent results! You certainly have the skills.  Great looking smoker too.
